4chia seed eggs 1 tablespoon of chia seeds mixed with 2.5 tablespoons of water = 1 egg
2tspvanilla extract
1/4 cupcoconut oilmelted and cooked at room temp
1/4cupblanced almond flour
1 cupprotein powder (non whey for dairy free)
1/2cuptapioca flour
1 tspbaking soda
1/2tspbaking powder
1tsp cinnamon
1/4 tsp sea salt
Instructions
1- In a small bowl, combine 4 tablespoons of chia seeds with 10 tablespoons of water. Stir well, and let mixture sit for 5 minutes to gel while you get the other ingredients together. This will serve as your 4 chia seed eggs)
2- Preheat the oven to 350 F. Spray a loaf pan with avocado/coconut oil or line with pachment paper.
3- In a large mixing bowl, mash the bananas until smooth.
4- Combine wet ingredients and add to the mashed bananas. Add teh chia seed eggs, vanilla extract, and melted coconut oil. Mix well to combine.
5- Mix dry ingredietns in a seperate bowl. Whisk together the almond lfour, protein powder, tapioca flour, baking soda, baking powder, cinnamon, and sea salt.
6- Combine wet and dry ingredients together, stirring until you have a well combined batter
7- Pour batter into prepared loaf pan.
8- Bake for approxiatemly 45-60 minutes. CHeck for doneness by inserting a toothpick into the center of the bread. It's done when the toothpick comes out clean or with just a few mosit crumbs attached.
9- Cool and serve.
10- Once cooled, slice into slender slices. It is perfect bare but you can add a layer of nut butter of your choosing (pecan butter is lifechanging).
